Gabriela’s menu is named in honor of Gabriela Silang, a brave female leader of the Ilocano independence movement against Spain. In the 1760s, she was a military leader who fought passionately to end Spanish colonization in the Philippines’ Ilocos region, ultimately sacrificing her life. Often called the Joan of Arc of Ilocandia, Gabriela Silang remains a profound inspiration for our work today.
